These Carne Asada Butternut Squash Enchiladas are These Carne Asada Butternut Squash Enchiladas are so easy to roll together with leftover carne asada, roasted butternut squash, enchilada sauce and cheese. Adjust the fillings to make these keto or paleo - but definitely you must try rolling them in these clever, low carb Crepini Egg Thins. ⁠

Yummy with guacamole and a sprinkle of cilantro. ⁠Didn't make them too saucy so you could see the crepini, but you can sauce away! ⁠

These Paleo chocolate mini-Bundt cakes are fruity, These Paleo chocolate mini-Bundt cakes are fruity, dense, and flourless - except for homemade ground coconut. Mix dry ingredients in the food processor, including coconut flour and carob or cacao powder. ⁠

Then mix up the wet in a blender, including blueberries, apples and orange zest, three eggs and honey. Combine, pour and bake. ⁠
⁠
Then - drizzle with Lekkco choclate spread, melted until it's got the perfect drizzle. ⁠

Lekkco's spreads are nut-free, but I couldn't resist garnishing one of my cakes with a few hazelnuts. I dusted another with powdered sweetener, just for fun. ⁠

These are fun to make and to share - Easter's right around the corner. And if you are avoiding eggs, apricot jam makes a great, easy filling. ⁠

Craving bread and want something quick and easy? T Craving bread and want something quick and easy? These Tapioca Flour Popovers are all that - mix'em up in the food processor while your oven is preheating - it's that fast. ⁠

Then in 22 minutes you have hot, tasty popovers just ready for that melty spread. ⁠
⁠
I used a popover pan but a muffin tin works too - they just won't be as tall. And if these look a lot like Yorkshire puddings, that's because they are basically the same recipe. ⁠

Gluten-free, dairy-optional, vegetarian⁠
⁠
You'll need:⁠
3 large eggs ⁠
1/2 cup full-fat milk of choice⁠
1/2 teaspoon pink sea salt or a bit less if you plan to put salted butter on these⁠
1/2 cup tapioca flour/starch⁠
1/4 cup gluten-free flour blend ⁠
1/2 teaspoon GF baking powder⁠
3 - 5 tsp. MCT oil or Coconut oil for greasing the pan⁠

It's a really simple recipe (basically my take on the one from Hawaiian Electric Company that I've used for years) but I used delicious San-J Gluten Free Organic Reduced Sodium Tamari to be sure there is no gluten in this teriyaki. ⁠
⁠
So easy: just mix together these ingredients:⁠
½ cup San-J Tamari⁠
¼ to 1/3 cup sugar (I use the smaller amount)⁠
1 tablespoon pressed garlic, or to taste⁠
1 tablespoon ginger, grated⁠
1 teaspoon Sriracha sauce⁠
1-2 teaspoons of sesame oil⁠
⁠
Marinate 1 pound of chicken pieces for at least 2 hours.⁠
Air Fry for 8-10 minutes at 360 F (check using a meat thermometer that the chicken has reached an internal temperature of 165 F - chicken breast cooks MUCH faster than thighs.)⁠

Simmer the extra marinade for a tasty sauce to drizzle on after air frying! ⁠

One more GREEN recipe for you: this tasty, Creamy One more GREEN recipe for you: this tasty, Creamy Spinach-Artichoke Dip blended up in the food processor from frozen spinach (or Power Greens), your favorite balance of yogurt/cream cheese/mayo, green onions, lemon juice, garlic and onion powders and salt. ⁠

It's about the easiest dip ever, as long as you remember to defrost the greens! ⁠
⁠
Optionally, add spice with pickled chopped jalapenos. ⁠
⁠
And, I really like @greenmountainfarms Greek Cream Cheese in this. ⁠

I like mine with potato chips rather than tortilla chips ... you? ⁠

Ingredients the same as a couple posts back. 😋⁠
You'll need: ⁠
2 cups blanched almond flour⁠
5 tablespoons arrowroot starch plus more for rolling out⁠
¼ teaspoon pink sea salt⁠
2 teaspoons fine matcha powder (I use Republic of Tea)⁠
½ cup unsalted grass fed butter softened (or ghee, coconut oil or palm shortening)⁠
3 tablespoons raw honey or maple syrup or ¼ cup if not dipping in chocolate⁠
1 teaspoon vanilla⁠
For the dipping chocolate⁠
4-5 ounces dark chocolate (I use Enjoy dark morsels)⁠
1/2 teaspoon coconut oil⁠
2 tablespoons sprinkles (Edward & Sons organic Sprinkels)⁠
