Here are 10 tasty, easy, wholesome gluten-free chickpea (or garbanzo) recipes to add to your collection! From soups and stews, to a tart, a salad and its dressing and muffins, there is something for every occasion in this group of recipes.
Chickpeas are delicious whole, as in soups, mashed or pureed as in hummus, or mashed or ground into flour for baking. Even the cooking water, called aquafaba, can be an important ingredient in a salad dressing, where it keeps the oil and water from separating.

Garbanzo Beans vs. Chickpeas
Garbanzo beans and chickpeas are the same plant, or specifically – the same legume.
From Spoon University comes a short summary of the two names. Chickpeas are also called "ceci beans" and the name Cicero is from the same root. English-speaking people tend to refer to these beans as Chickpeas.
Garbanzo comes from the Spanish language and is related to "algarroba" -- the word for carob.
Dry beans vs. canned beans
I prefer starting with dry beans for economy, though canned chickpeas can be very reasonably priced. It really depends on your preference and what you have time for.
Beans are economical, and they contain protein, which is why they are an important component of many diets from vegan to traditional.
Beans are not on the paleo or keto diets because of their lectin and starch content. However, though we eat largely Paleo we also tolerate beans well - and my grandson loves being able to pick up individual beans from a dish and nibble on them - so here they are.
The first two main dish recipes contain meat. The second one has a vegan option, which I call a 2-ways recipe).

No one who has ever tasted these muffins ever suspected they contain mashed garbanzo beans. They are such a hearty muffin - great for breakfast - or top them with candied carrots for dessert.
