This layered pineapple-honeydew lassi is a delicious way to enjoy two ripe fruits blended with yogurt and coconut milk. It's quickly mixed up in a blender or food processor, great for summer barbecues or picnics as we are able to start seeing friends and family again.
Ingredient suggestions
Thanks to my blogging colleague Lathiya of Lathi's Kitchen, whose mango lassi recipe was the inspiration for this layered pineapple-melon lassi. Though I shopped carefully, I didn't find ripe mangoes, though they will be available soon here in Honolulu. But we did find perfect pineapple and honeydew and decided to adapt! Watermelon is a very common fruit for lassi, too, but again, that is only just showing up in markets.
Of course I couldn't just blend all the fruit together but had to make layers!!
This recipe is vegetarian when made with dairy yogurt or vegan when made with coconut milk and coconut yogurt. The brand of yogurt you choose will affect the flavor - Strauss, for example, is more tart, while Brown Cow is less so. We were not tempted to add sugar in either case.
For the most refreshing drink, start with refrigerated ingredients. If your ingredients are at room temperature, it takes about 30 minutes in the refrigerator for a glass of the lassi to cool to a refreshing drinking temperature.
Food processor or blender?
Use whichever you have at hand. The blender will give a smoother lassi but the food processor will get pretty close if you let the blending go for 2 or 3 minutes. I prefer the food processor because it's easier to remove the blended fruit and yogurt than from my Vitamix.
Is this recipe low in sugar?
Though lassi recipes often include sugar, we added no sweeteners because our fruit were already so sweet. If you like sweet drinks, you could start by adding a tablespoonful of sugar to each of the layers.
As is, this recipe has only four ingredients and is refined-sugar-free.
Best of all, the only task that takes any time is peeling and chunking the fruit. Well, and washing the food processor.

Layered Pineapple-Honeydew Lassi
Ingredients
Green (Honeydew) layer
- 2 cups honeydew melon chunks
- ¼ cup coconut milk
- ¼ cup plain dairy or coconut yogurt
Golden (pineapple) layer
- 2 cups pineapple chunks
- ¼ cup coconut milk optional (to make the top layer slightly thicker)
- ¼ cup plain dairy or coconut yogurt
- Garnishes: extra yogurt; pineapple chunks; mint leaves
Instructions
- Place all the ingredients for the honeydew layer in a blender or food processor.
- Blend till smooth and creamy, about 2-3 minutes. Pour the honeydew mixture evenly into three glasses.
- Add the remaining ingredients to the blender or food processor and blend until smooth.
- Hold a spatula or spoon over the surface of the lower layer, and pour the pineapple mixture onto the spoon, letting it flow slowly down so that it doesn’t disturb the bottom layer very much.
- Serve chilled, garnished with a swirl of yogurt, extra fruit, and a mint leaf.
