Peach-Raspberry Surprise Smoothie

This peach-raspberry surprise smoothie is delicious and refreshing! We make it gently layered for a beautiful and easy way to enjoy fresh peaches and tart raspberries. The surprises are the zucchini and hemp seeds that add to the nutrition!

Ingredients

Peach-berry (bottom) layer

  • ½ cup frozen raspberries
  • ½ cup frozen peaches slightly thawed
  • ⅓ cup peeled and chopped zucchini
  • ⅓ cup unsweetened almond milk or other non-dairy milk of choice
  • 1 tablespoon hulled hemp seed

Peach (top) layer

  • 1 cup frozen peaches slightly thawed
  • ⅓ cup peeled and chopped zucchini
  • ⅓ cup unsweetened almond milk
  • 1 tablespoon hulled hemp seed
  • Pinch of ground cinnamon optional

Instructions

  • For the raspberry (bottom) layer: Place all ingredients in blender (I use a Vitamix) and puree until smooth.
  • Divide between two glasses. To get the largest difference between the layers, either use a flexible spatula to remove the puree or rinse the blender.
  • For the Peach (top) layer: Place all ingredients in blender and puree until smooth. Divide between the two glasses, pouring mixture slowly down the side of the glass to keep the layers separated.
  • Garnish with frozen raspberries, a sprinkle of hemp seed, and slices of zucchini.
  • Serve!

Notes

If you don’t need the layers, blend all of the ingredients at once and enjoy!
The Vitamix is an amazing blender, but even it has a hard time processing frozen peach slices unless you let them thaw partially. Using frozen fruit lets you produce a cold smoothie without using ice cubes.
If you'd like the mixture sweeter, add a few frozen banana chunks while blending. This was plenty sweet for my 1-year-old grandson, though.
