Ingredients
Green (Honeydew) layer
2cupshoneydew melon chunks
¼cupcoconut milk
¼cupplain dairy or coconut yogurt
Golden (pineapple) layer
2cupspineapple chunks
¼cupcoconut milkoptional (to make the top layer slightly thicker)
¼cupplain dairy or coconut yogurt
Garnishes: extra yogurt; pineapple chunks; mint leaves
Instructions
Place all the ingredients for the honeydew layer in a blender or food processor.
Blend till smooth and creamy, about 2-3 minutes. Pour the honeydew mixture evenly into three glasses.
Add the remaining ingredients to the blender or food processor and blend until smooth.
Hold a spatula or spoon over the surface of the lower layer, and pour the pineapple mixture onto the spoon, letting it flow slowly down so that it doesn’t disturb the bottom layer very much.
Serve chilled, garnished with a swirl of yogurt, extra fruit, and a mint leaf.
