Layered Pineapple-Honeydew Lassi

Ingredients

Green (Honeydew) layer

  • 2 cups honeydew melon chunks
  • ¼ cup coconut milk
  • ¼ cup plain dairy or coconut yogurt

Golden (pineapple) layer

  • 2 cups pineapple chunks
  • ¼ cup coconut milk optional (to make the top layer slightly thicker)
  • ¼ cup plain dairy or coconut yogurt
  • Garnishes: extra yogurt; pineapple chunks; mint leaves

Instructions

  • Place all the ingredients for the honeydew layer in a blender or food processor.
  • Blend till smooth and creamy, about 2-3 minutes. Pour the honeydew mixture evenly into three glasses. 
  • Add the remaining ingredients to the blender or food processor and blend until smooth. 
  • Hold a spatula or spoon over the surface of the lower layer, and pour the pineapple mixture onto the spoon, letting it flow slowly down so that it doesn’t disturb the bottom layer very much. 
  • Serve chilled, garnished with a swirl of yogurt, extra fruit, and a mint leaf.
