Dark Chocolate-Dipped Paleo Matcha Cookies are jus Dark Chocolate-Dipped Paleo Matcha Cookies are just the thing for a healthy-ish St Paddy's Day goodie - or any time. OK, the sprinkles aren't paleo, but the rest is, and so easy and yummy. Vegetarian with vegan option; no eggs. ⁠
⁠
You'll need: ⁠
2 cups blanched almond flour⁠
5 tablespoons arrowroot starch plus more for rolling out⁠
¼ teaspoon pink sea salt⁠
2 teaspoons fine matcha powder (I use Republic of Tea)⁠
½ cup unsalted grass fed butter softened (or ghee, coconut oil or palm shortening)⁠
3 tablespoons raw honey or maple syrup or ¼ cup if not dipping in chocolate⁠
1 teaspoon vanilla⁠
For the dipping chocolate⁠
4-5 ounces dark chocolate (I use Enjoy dark morsels)⁠
1/2 teaspoon coconut oil⁠
2 tablespoons sprinkles (Edward & Sons organic Sprinkels)⁠

This Apple-Brie Chicken Sandwich is so flavorful w This Apple-Brie Chicken Sandwich is so flavorful with the tart cranberries and apples, a little sweetness from a honey-mustard sauce and substance from good brie and some fresh roast chicken. ⁠

And I learned from @capecodselect that cranberries are harvested all year! ⁠

It's a Paleo copycat of one of my favorites, Etai's Big Apple chicken sandwich, which I buy at Natural Grocers. This one is on my own Paleo Low-Carb Seed Bread. So good! I used Mary's Organic Chicken, and Haystack Mountain Cashmere Double Cream Baby Brie.⁠

You will need:⁠
⅓  apple, sliced⁠
4 ounces chicken breast from roasted chicken or rotisserie⁠
2-3 slices of brie cheese⁠
Lettuce leaves⁠
Honey-mustard sauce (1 tablespoon each of dijon mustard and honey)⁠
10 Cranberries, fresh or frozen, cut in half)⁠
2 slices Paleo seed bread⁠

It's a fabulous mixture of passion fruit, citrus and pineapple juices. It dates to the 1940's at Pat O'Brien's in NOLA.⁠

If you really want a rum flavor, a little rum extract would do that for you. ⁠

I found these great hurricane glasses at Arc Thrift - perfect!! I just pictured them in my mind and there they were, 99 cents each. ⁠

I used raspberry-lime Spindrift for that lovely rosy upper layer and maraschino cherries (Tillen Farms) that are tinted with fruit rather than red dye so I can share it with my grandson. ⁠

You will need for 6 generous servings:⁠
⁠
2 cups passion fruit juice or passion fruit/juice blend (I used a passion/pear blend from Ceres)⁠
1 cup orange juice, fresh-squeezed⁠
1 cup pineapple juice⁠
½  cup freshly squeezed lime juice, about 2-3 large limes⁠
2 Cans of chilled raspberry-lime Spindrift⁠
2-3 Ice cubes for each glass⁠

GARNISHES⁠
12 maraschino cherries (2 per glass) from Tillen Farms⁠
Lime slices, 1 per glass⁠
Orange slices, 3, cut in fourths⁠
6 bamboo skewer-picks⁠

Gluten-free because they are made from cassava and tapioca flours. Definitely NOT dairy-free, sorry all. ⁠

You'll need:⁠
1 stick butter ⁠
¾ cup cassava and 2 ¼ cups tapioca flours⁠
2 eggs⁠
2 cups shredded mixed Mexican cheeses⁠
1 cup parmesan cheese shredded⁠
1 tsp baking powder⁠
1/4 tsp salt⁠
1 1/2 cup milk (I use oat or coconut)⁠

Ruby Cacao Chip Valentine Cookies have ruby cacao Ruby Cacao Chip Valentine Cookies have ruby cacao chips in a 5-ingredient almond flour dough. Press into heart cookie cutters to shape (yeah, fiddly I know), bake, and you have an addictive cookie with the slightly tart, fruity flavor of ruby cacao. ⁠

Stir together: ⁠
2 1/4 cups almond flour⁠
1/3 cup coconut sugar⁠
1 egg or flax egg⁠
1/2 cup coconut oil, melted⁠
1 teaspoon vanilla⁠

Then stir in 1/2 cup chips - any more will fall out⁠
Shape your cookies⁠
Bake at 350 F for 10-12 minutes!⁠
